Scones out of muffin pan.
It's Sunday again! The day that I probably most look forward to out of 365 days. It is probably also the most tiring day of an entire week, at this period. However, also the happiest day of every week. These are all because I get to have all my time with my two precious.
Well, I love Sunday too because it is probably the only day I can bake or cook something for my love ones that always make me feel a little accomplish as a mother, a wife or even a daughter. To begin with, I am not great in baking and dread all the many steps. These days, there can be found many easy and simple ingredients recipes online for almost anything you wish to do… so glad for that. Also, I have been making do with whatever is available in my kitchen.
While we all know that scones are probably one of the easiest to bake with the simplest ingredient that most household would have. The most critical part is probably the rubbing-in method. However, I ever came across using metal knife and forks to do the corporation of the butter and flour. It makes the job so much easier and neater and I have been using the cutlery thereafter for this method required.
I missed the scones from Muffin Man in London. They were really soft, moist and buttery unlike those that are usually dry and hard. After a few searches online, I found this recipe by Alton Brown awhile ago and has been kept in my recipe folder. The scones are almost closed to those at Muffin Man, either that, I may have not done right somewhere. But they still turned out moist, buttery and fluffy!
Because this recipe calls for soft and moist scones, the dough batter was already more wet to handle. This time I substitute heavy cream (which we ran out) with milk, and perhaps so, the dough was even more soggy to meddle with. Being very lazy this Sunday, I had this idea to just scoop the batter into muffin pan.
Lucas was just in time for some tea after his swimming lesson. Suddenly, he started to arrange the table with knives, forks and bowls for all of us. This is when we know what he has been learning in school.
Sadly, our home has also run out of jam.
After tea, we set off for some family time at the park.

After 15 minutes of baking, these are what I got.
Look at that foodie eyeing on the freshly baked scones.

The haze is coming back. Keep hydrated and stay indoor as much as possible. Let's look forward to a brand new week!
