Soaked.Egg Benedict.Stew Beef

When all have been well, it has also been testing my energy. With so many things in mind and so much things to do everyday, I do not really have the time to sit down and ponder and time just passed by. Is it my working hours? Is it my time management? Is it Lucas?

The amazing thing after I have become a mother is that I do not know when my energy will be depleted cause it keeps coming and refilling everytime I thought I am giving up. I guess it's all about Love and what you want to give to your child and/ or family.

20th Feb 2011 was one of the great day and especially it falls on a lovely Sunday. Dempsey, Hacienda cafe, egg benedict, girlfriends (the company that really matters), mahjong, dinner, yakking.... It's good enough to keep me mesmerized over a few days. Am looking forward to more...

And talking about the egg benedict at cafe Hacienda, it was delicious. I attempted to create my own egg benedict for our breakfast and just, before he left for his flight. Yes, I serve all day breakfast. :D The hollandaise sauce is replaced by laughing cow cheddar. Relying on my memories, I made it without the bacon and rocket veg side. Simply, toasted the gardenia burger, poached the eggs, lay the cheese and 30s in microwave. Spiced it with a little pepper and Voila!

For dinner today, it was Stew Beef. It such a simply and hearty dish that takes only 10min to prepare. The rest of the job was left to the slow cooker. :D Lucas had his share. And we had it with Japanese curry. Yummy...
